Naosap Harvest Granola Bars

My kids rave about these granola and are waiting for me to make more. They all took extra in their lunches to share with classmates. Healthy and yummy - who could ask for more?

Ingredients
- 1 bag wild rice flour Local www.NaosapHarvest.com
- 1 bag hemp seed Manitoba Harvest
Directions
Ingredients:
2 cups (500 mL) rolled oats
1 cup (250 mL) Naosap Harvest Wild Rice Flour
1/2 cup (125 mL) Manitoba Harvest Shelled Hemp Seed
2 tbsp (30 mL) chia seeds
1/3 cup (75 mL) brown sugar
1 tsp (5 mL) cinnamon – I added 2 tsp.
1 cup (250 mL) raisins or dried fruit – I also added a handful of chocolate chips
1/2 tsp (2 mL) salt
1/3 cup (75 mL) honey
1 egg, beaten
1/4 cup (60 mL) canola oil
3/4 cup (60 mL) unsweetened apple sauce (add 1/4 cup more = chewier)
2 tsp. (10 mL) vanilla extract
Directions:
Preheat oven to 350 F. Oil a 9 X 13 inch (22 X 33 cm) baking pan.
In a large bowl, mix together the oats, flour, hemp seed, brown sugar, cinnamon, raisins, chocolate chips and salt. Make a well in the center, set aside.
In a small bowl, combine honey, egg, canola oil, apple sauce and vanilla. Add liquid ingredients to well and mix. Pat the mixture evenly into the prepared pan.
Bake for 20 to 25 minutes in the preheated oven, until bars begin to turn golden at the edges. Cool for 5 minutes, then cut bars while still warm.
***Do not allow bars to cool completely before cutting, or they will be too hard to cut.***
Our school is nut-free, so I did not add them. You could add a variety of dried fruits, nuts, chia seed, etc.
Backstory
We harvest and sell certified organic wild rice. I bought a mill and started grinding flour. I developed this recipe and add our wild rice flour to pizza dough, bread recipes and it is fantastic as a fish coating.
