Easy Raspberry Jam and Almond Bars

Homemade raspberry jam and local grains in a quick and easy, tasty dessert. We've also used strawberry jam!

Ingredients

  • I cups butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 Eggs Local Aagaard Farms
  • 1 teaspoon almond extract
  • 3 cups flour Local De Ruycks
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 cups toasted sliced almonds
  • 1 1/2 cups raspberry jam Local Aagaard Farms

Directions

Pre-heat oven to 350 . Grease a 9″x13″ pan. Toast the almonds, if needed, about 7 minutes. Put butter and sugars in bowl. Brown sugar should be lightly packed. Cream with hand mixer until light and fluffy, about 2 minutes. beat in eggs and almond extract. Mix dry ingredients, except almonds, in a small bowl. Slowly mix into butter mixture, then stir in almonds. Press half into the pan. Sitr jam and then spread over dough in pan, leaving 1/4 ” border on the edges. Sprinkle rest of dough on top, press lightly. Bake 35 – 40 minutes.
