Beet pudding... this recipe can be used with most root vegetables, such as carrot, sweet potato, rutabaga, etc.

  • red beets Local

Directions

Steam or boil red beet roots until they are thoroughly cooked and soft in the centres. Once cooled, peel off the skin. Put beets in food processor or blender, and blend until smooth. Mix in preferred sweetener as desired. I like to use Stevia as my sweetener. Make the batch as big or as small as you like!

Backstory

Making fun vegetable recipes is a great way to encourage kids to eat their vegetables. I’ve made beet and carrot pudding for my son, and he loves them! This recipe is one I devised to make eating veggies fun!

Kitchen Wisdom

You can compost all your unused scraps! Don’t forget, beet tops are great as cooked greens, and dogs, cats, and chickens love them too!

Some like to save the beet water for stews or smoothies, or as a tea.
